In this demo style class Dave Swanson, chef and owner of Braise Restaurant, will explore five types of cheese: fresh, soft, ripened, blue, uncooked (pressed) and cooked (pressed). We will sample many items from Dave's favorite food group, Wisconsin cheese, representing each category listed. Plus, we will learn how to create our own cheese at home!
