Like most people, the team here at This Bites doesn’t necessarily need to know how the sausage is made. But when a solid sausage-maker like Clarke Street Sausage Co. moves into the Radio Milwaukee neighborhood, we want all the info we can get.

If you’re a regular at local farmer’s markets, you’ve probably seen co-owners Lucas McDonald and Vivian Sotolongo selling under the Clarke Street name. When they officially take over the former Soup Brothers space at 209 W. Florida St., it’ll be as Hen’s Deli (“Hen” being a nod to their kids: Hadassah, Eva and Noah).
