Press Waffles owners Emily Thomas and Aaron Rosko announced that they are opening a cafe in the Third Ward this spring to expand their business beyond their blue trailer.
The cafe, called Press Au Marche (meaning “at the market”), will be located on the first floor of the Marshall Building at 207 E. Buffalo Street.
As they go from wheels to workplace, they hope to bring new items to the menu besides their traditional sweet and savory waffles.
Thomas and Rosko are planning to serve coffee, espresso, baguette sandwiches and soups while still prioritizing their traditional Belgian waffles. The cafe may even serve alcohol later down the road.
The duo also came up with a unique lunchbox idea that will be available beginning in April. Each box will include a sandwich, a salad and of course, a mini waffle.
Initially, Thomas and Rosko sold their waffles at farmers markets and other local festivals and events. In 2017, the duo took to the streets and sold their waffles on the go from their vintage style food trailer.
And while the new 390-square-foot cafe space is not gigantic by any means, it will be a big step up from the old trailer. Thomas and Rosko also plan to obtain an outdoor seating permit to maximize options for warm-weather seating.
The Marshall Building's lobby is currently undergoing minor renovations that include the expanding of the space that Press Au Marche will take over this spring.
