After three years on the Milwaukee farmer's market scene, Clarke Street Sausage Co. is preparing to open its first brick-and-mortar location under a new name.

Hen's Deli will open in the space at 209 W. Florida St. and simultaneously fill two voids: the storefront previously occupied by Soup Brothers (which closed over the summer) and the handheld food option left by Boo-Boo's Sandwiches (which shut down last week).

Despite the name change, the owners said online that the Clarke Street specialties will remain at Hen's Deli, including hand-ground and stuffed sausages, traditional boil-baked bagels, fruit-filled cookies, BBQ dinners and more. Signs in the window of the future eatery promise sausage sandwiches, tortas, homemade bagels, gourmet subs and cookies.

The current plan is to open sometime in 2023, although Hen's Deli currently has a GoFundMe with a goal of $10,000 to help "push forward through any unforeseen hurdles."
